Enzyme
Ascorbate Oxidase is an enzyme belonging to the family of oxidoreductases that catalyses the reaction: Ascorbic acid + ½ O₂ ascorbate oxidase → Dehydroascorbic acid + H₂O.

- Isoelectric point (pI): between 6,0 and 7,8, 8,2 (Lit.)
Substrate specificity: The enzyme oxidises ascorbic acid and several ascorbic acid derivatives.
It is useful for enzymatic determination of ascorbic acid and for eliminating the interference of ascorbic acid in clinical analysis.
Unit definition: One unit will oxidise 1,0 µmole of L-ascorbate to dehydroascorbate per minute at pH 5,6 and 20 °C.
Stabilisers: Bovine serum albumin (BSA), borax, basic amino acids
Inhibitors: Azide, cyanide, Na₂S, diethyldithiocarbamate (Na)
