Bei der Verarbeitung von Fleisch- und Milchprodukten können Mikroorganismen bei unzureichenden hygienischen Bedingungen in Lebensmittel gelangen. Der drastische Anstieg der Lebensmittelkontamination durch <i>E. coli</i> O157 erfordert zuverlässige und schnelle Nachweismethoden.
